Job Summary :

The Chef de Cuisine is responsible for overseeing the entire kitchen operation, ensuring the highest standards of food quality, consistency, hygiene, and staff management. This role leads the culinary team in menu creation, kitchen organization, cost control, and food presentation in alignment with the brand's standards and guest expectations.

Key Responsibilities :

  • Lead and manage daily kitchen operations, including food preparation, cooking, and presentation.
  • Develop innovative menus and recipes in collaboration with the Executive Chef and management.
  • Maintain food cost within budget by effective inventory control, waste reduction, and portion management.
  • Ensure compliance with food hygiene and safety standards (e.g. HACCP).
  • Supervise, train, and mentor kitchen staff to maintain high performance and morale.
  • Schedule and assign duties to kitchen team members based on operational needs.
  • Conduct regular quality checks on ingredients, cooking processes, and final presentation.
  • Monitor kitchen equipment maintenance and ensure cleanliness and proper functioning.
  • Collaborate with procurement to ensure timely ordering and proper stock levels.
  • Handle guest feedback related to food quality and take corrective actions promptly.

Requirements :

  • Proven experience as a Chef de Cuisine or Senior Sous Chef in a reputable kitchen (preferably hotel or fine dining).
  • Formal culinary training or equivalent work experience.
  • Strong knowledge of various cooking techniques, cuisines, and kitchen management.
  • Excellent leadership, communication, and interpersonal skills.
  • Ability to work under pressure in a fast-paced environment.
  • Good understanding of cost control, inventory, and hygiene standards.
  • Flexibility to work on weekends, public holidays, and shifts as required.
