Roles & Responsibilities
We are seeking a talented and experienced General Manager cum Head Chef to lead the successful expansion of Warung Leko, a renowned Javanese culinary brand, into the Singapore market. This role combines strategic leadership, culinary innovation, and hands-on operational management to ensure the brand’s identity, quality standards, and customer experience are upheld while adapting to local preferences.
Key Responsibilities :
Strategic Leadership & Business Expansion
- Develop and execute the overseas expansion plan, including market entry strategy, licensing, and partnerships.
- Conduct feasibility studies, identify suitable locations, and oversee the setup of new outlets.
- Manage business registration, licensing, and regulatory compliance with Singapore authorities (e.g., SFA, NEA, MOM).
- Build and lead the core launch team, including local hiring, training, and performance management.
- Oversee financial planning, budgeting, and profitability targets for the Singapore operations.
Culinary Direction & Quality Control
Lead menu development and adaptation to suit local preferences while maintaining brand authenticity.Ensure consistency in taste, presentation, and portion across all outlets.Train and mentor kitchen staff on authentic recipes, cooking methods, and food hygiene standards.Source ingredients, establish supplier relationships, and ensure cost control without compromising quality.Kitchen Operations & Service Management
Manage overall kitchen operations for lunch and dinner services.Lead and train kitchen staff to ensure high-quality food preparation and presentation.Oversee menu planning, inventory management, and food cost control.Ensure compliance with health and safety regulations.Collaborate with training teams from Warung Leko Indonesia to maintain culinary standards.Customer Experience & Operational Excellence
Establish and implement SOPs for kitchen and front-of-house operations.Supervise daily operations to ensure smooth service and excellent customer satisfaction.Drive initiatives to enhance dining experience, operational efficiency, and brand reputation.Oversee inventory control, procurement, and waste management systems.Marketing & Brand Development
Collaborate with marketing teams to localize branding, promotions, and digital campaigns.Represent the brand in media engagements, events, and partnerships to build awareness in the Singapore market.Monitor market trends and competitor activities to identify growth opportunities.Leadership & Team Development
Build a strong, motivated team culture aligned with the brand’s values and service excellence.Provide leadership, training, and career development opportunities for local staff.Foster collaboration between the Singapore team and headquarters for operational alignment.Requirements
20 years of experience as a chef, ideally with leadership responsibilities in Javanese lunch and dinner services.Proven track record in restaurant expansion, team building, and regulatory compliance.Knowledge of Javanese cuisine preferred, including dishes like Rawon, Gudeg, and Nasi Liwet.Must be able to understand Bahasa Indonesia for training and communication with Warung Leko trainers.Ability to handle a variety of kitchen operations, including breakfast and set menus.Excellent communication and interpersonal skills.Commitment to upholding cleanliness, hygiene, and food safety standards.Tell employers what skills you have
