Roles & Responsibilities

Key Responsibilities :

  • Meat Processing & Preparation : Skilfully handle, cut, and prepare a wide range of meats including pork, beef, poultry, and game, using both traditional and modern butchery methods.
  • Product Development : Create exceptional sausages, pâtés, cured meats, and other specialty products that reflect our commitment to quality and innovation.
  • Quality Assurance : Maintain rigorous standards of freshness, hygiene, and product consistency in line with food safety regulations.
  • Inventory & Waste Management : Oversee stock levels, order supplies, and implement waste reduction practices to ensure efficiency and sustainability.
  • Production Planning : Accountable for achieving the monthly production tonnage targets to ensure maximum utilization of resources, operational efficiency, and fulfillment of customer demand.
  • Training & Mentorship : Guide and develop apprentices and junior team members, fostering a culture of excellence and craftsmanship.
  • Health & Safety Compliance : Ensure all processes meet regulatory, hygiene, and workplace safety requirements.
  • Administrative and Budgeting : Responsible for preparing and managing the department’s annual budget, ensuring effective cost control measures are in place, and monitoring actual production costs to prevent any budget overruns.

Requirements :

  • Certified Master Butcher : Completion of a recognized apprenticeship and Master Butcher certification (or equivalent qualification).
  • Passion for the Craft : Deep enthusiasm for quality meats, traditional techniques, and the art of butchery.
  • Precision & Detail : Strong focus on accuracy, cleanliness, and product presentation.
  • Physical Capability : Able to perform physically demanding work in a dynamic, fast-paced environment.
  • Fluent in English : Strong written and verbal communication skills.
  • Flexibility : Willingness to work varied hours, including weekends, as required by operations.
  • Preferred Qualifications

  • Proficiency in both traditional and contemporary butchery techniques.
  • Knowledge of curing, smoking, and preservation methods.
  • Strong customer service and interpersonal communication skills.
  • Experience in stock and inventory control.
  • Interest in sustainability and ethical meat sourcing.
